Handmade Pasta Dough

Makes 500g of pasta dough
INGREDIENTS:
2 eggs
1 cups 00 flour
3/4 cup of semolina flour
1 1/2 tablespoons extra virgin olive oil
1-2 tablespoons water, if needed
INSTRUCTIONS
1. For dough: in a mixing combine flours and whisk together.
2. On a clean work surface or in a bowl place 1 1/2 cups of flour mixtrure in a mound.
3. Make a well in the center of flour and crack eggs, followed by oil.
4. Using a fork gently whisk eggs and oil together while slowly incorporating flour.
5. Once flour and eggs are combined, add the rest of flour little by little to form a ball that is no longer sticky to touch.
6. If dough is dry add water, 1 tablespoon at a time.
7. Wrap in plastic and let sit for about 30 minutes before using.
8. Follow pasta machine instructions for rolling out the dough and cutting into desired pasta type.
